Why Should the Malting and Brewing Industry Be Concerned About Food Safety? Part 1

Tatiana A. Lorca. Ecolab, Inc., St. Paul, MN, U.S.A.

Abstract
In January of 2011 the Obama Administration signed into law the U.S. Food and Drug Administrationís (FDAís) Food Safety Modernization Act (FSMA). FSMA is the latest amendment to the Food, Drug and Cosmetic Act that originated in 1938, which addresses the materials and rules most breweries and other food producers function under today. FSMA is the most sweeping reform in food safety in over 70 years. It is designed and aimed at prevention of contamination rather than responding to it. This is the basis of why an understanding as well as a practice of food safety is not only important, it is now required by law.
