Malt analytical figures are reviewed and interpreted using data from the Malt Analysis Check Service of the American Society of Brewing Chemists. The malt analyses covered are Moisture, Extract (fine grind, dry basis), Fine/Coarse Extract Difference, Colour, Diastatic Power, Alpha Amylase, Malt Protein and Wort Protein. The value of various analyses in predicting brewhouse behaviour is discussed. A malt report form in which analyses are presented sequentially is recommended.
