The determination of pitching yeast concentration

Abstract
A method for determining pitching rate concentration is presented. The procedure utilizes 30% alkali to separate extraneous material, thus providing a more accurate estimation of the yeast present. Pitching rate is established as number of cells per ml. of wort. Charts and data are presented indicating the greater accuracy of the alkali method as compared to the normal method without alkali.
