A study of the colloidal material affecting the filtration of beer

Abstract
The authors describe the results of an investigation into the causes of the premature clogging of final membrane filters in normal brewery operations. The analytical techniques used to determine the quantity and composition of the principal clogging materials, viz., proteins, polyphenols, and polysaccharides, are also described. The results indicate that specific enzyme treatments can substantially improve filter throughputs and appear to have other beneficial effects at other stages in the brewing process.
