Performance and stability of culture yeast

Abstract
Report on an investigation which shows that the genetic constitution of brewers yeast is quite stable. If, in spite of this, changes are observed in the properties of the yeast, they are most probably due to improper handling. If properly handled, brewers yeast can survive a long time without degeneration.
